nick and lauri

Nick and Lauri Dahl grew up in Redmond and met in 1986. After getting married and graduating from Central Oregon Community College, they moved to Corvallis to attend Oregon State University, where their sons Nathaniel and Ben were born. The foundation of their partnership was cemented during these formative years, with long walks through the Oregon State campus and vibrant discussions about cuisine and culture.
Upon graduating, Nick and Lauri took their passions eastward to State College, Pennsylvania. Here, Nick pursued a Ph.D. in Communication at Penn State while Lauri worked at The Corner Room, a hub for the community dating back to 1855.
From there, they moved their family to Ithaca, New York where Nick taught at Cornell University while Lauri worked in hospitality. In Ithaca, Lauri embraced culinary arts by working at Renee’s, a renowned French restaurant, and Gimme! Coffee, an up and coming third wave coffee house. Lauri’s time with Renee Senee introduced her to the world of patisserie and equally, time with Kevin Cuddeback from Gimme! Coffee brought her into the early days of the third-wave coffee movement. A goal from the beginning has been to combine these experiences with Tite Knot.
"The experiences we have enjoyed in hospitality over the decades we brought back to Redmond and when the original Tite Knot property on 10th Street was purchased, the idea was to create a space for the community to come together. As luck had it, Tite Knot opened in January 2021 during the tumult of the COVID-19 pandemic. While this time was difficult, it allowed reflection and encouraged dedication to a person’s dreams. We hope this dedication is apparent as you enjoy your experience with Tite Knot."
